Fruity Pebbles Pancakes with Cereal Milk Whip

INGREDIENTS
  

Fluffy pancakes with fruit balls

  • ▢1 cup milk (dairy or vegetable)

  • ▢1 tablespoon white distilled vinegar (or lemon juice)

  • ▢1 cup all-purpose flour

  • ▢2 teaspoon baking powder

  • ▢2 tablespoons light brown sugar

  • ▢½ teaspoon salt

  • ▢1 large egg

  • ▢1 teaspoon vanilla extract

  • ▢½ cup Fruity Pebbles

  • ▢3 tablespoons unsalted butter

Optional cereal milk whipping cream

  • ▢½ cup heavy cream

  • ▢⅓ cup Fruity Pebbles

  • ▢1 tablespoon powdered sugar

INSTRUCTIONS
 

Optional Cereal Milk Whipped Cream

  • Place the whipping cream and Fruity Pebbles in a small bowl and stir a few times to combine. Place the bowl in the refrigerator for at least 30 minutes to soak the mixture.
  • After 30 minutes, remove the Fruity Pebbles cream from the refrigerator and add the powdered sugar. Beat with a hand mixer on high speed until stiff peaks form. Set aside until ready to serve the cream over the pancakes!
    *It is not necessary to sift the cornflakes as you would with a typical cereal milk. The Fruity Pebbles will soften and dissolve easily in the whipped cream if you use a hand mixer.

Fruity Pebbles pancakes

  • In a measuring cup or small bowl, add the vinegar to the milk and set aside until the milk curdles slightly to make soured buttermilk.
  • In a large mixing bowl, whisk together flour, baking powder, brown sugar and salt.
  • Add the egg, vanilla extract, and buttermilk mixture and whisk until smooth, being careful not to over-whisk.
  • Fold in the Fruity Pebbles and transfer the batter to a measuring cup or other container with a spout (see instructions).
  • Add butter to skillet or saute pan and heat over medium heat until butter is melted.
  • For the thickest, perfectly round pancakes, use pancake molds. Pour batter into the molds or into clear circles in the pan and bake over medium heat until small pockets of air form.
  • When you see the little pockets of air on your pancakes, it's time to flip them! Make sure there is always enough butter in the pan to fry the pancakes and keep them from sticking together (you may not need all 3 tablespoons).
  • Serve warm with Cereal Milk Whipped Cream (optional) and maple syrup.
